The cherries for this C Market Coffee are hand-sorted, removing the unripe and overripe cherries to get a sweeter and cleaner taste. After being harvested at its peak, the coffee drys in thin layers on drying tables. This process prevents fermented flavours from reaching the "raisin" stage at about 25% moist in a few days. The second phase begins when the beans are at a 25% - 12% moisture level. The beans are layered, moving them carefully to avoid damage and at specific times to maximize drying time. If the beans are dried too quickly, this makes the coffee too fruity and unstable. Drying too slowly can create mould and other off flavours. When it's done just right, you have C Market Coffee quality.
