If you find yourself with a sweet-tooth for a deserty-like coffee, then our Balam SL28 natural is for you. This coffee has a deep flavor of chocolate, notes of dark cherry, and light acidity.
Dense in the cup, it coats all your palate with a deep chocolate layer with nuances of black cherry acidity that complements perfectly. This is our farm's second release of 2023, and we are extremely excited to share more of what Balam has to offer.
The Roast
This naturally processed lot of SL28 has been light roasted to show its amazing notes. Sweet cacao aroma, full body and a layer of cherry acidity.
This is a versatile coffee, because of its density it can take light ratios and still deliver a full bodied cup. We recommend (18 : 1) and adjust according to your preference. It makes wonderful espressos, we do 18.5g for 60ml output, water temperature at 97 celsius.
The Bean
SL28 is a great varietal, very resilient and with a great cup potential. SL28 is among the most well-known and well-regarded African varietals. It was selected in 1935 from a single tree in what today is Tanzania and it was developed by the National Agricultural Laboratories in Kenya. The varietal got its attention from showing strong drought resistance, while having a great cup potential.
We planted these SL28 trees in 2016 with the idea of sharing them in the future with the Canadian community, the time has come, the fruits are ripening and here we are ready to share.
This SL28 lot was naturally processed. After harvest, the coffee beans were dried in full cherry on raised beds for three weeks. Learn more about the different processing methods here!
